Noma, one of the world’s most acclaimed restaurants, is set to close its doors to diners in the winter of 2024. The Copenhagen, Denmark restaurant, which has been serving up Nordic cuisine since 2003, will be transformed into a new concept the following year.
Chef and co-owner Rene Redzepi announced the news in an Instagram video, saying, “To continue being NOMA we must change.” The new concept, dubbed Noma 3.0, will be a “giant lab” dedicated to the work of food innovation and the development of new flavors.
Noma has been awarded three Michelin stars and has been named the world’s best restaurant multiple times. Its menu has featured dishes based on locally foraged ingredients, from reindeer brain custard with bee pollen to a quince and fermented rice ice cream with an oyster caramel.
The restaurant said in a statement on its website that the new concept will allow them to “share the fruits of our efforts more widely than ever before.” Redzepi and his team have not yet revealed any further details about the new concept.
Noma is not the first time the restaurant has closed and re-branded. This time, however, it will be the last time diners will be able to experience the restaurant in its current form.
